Pantry Staples

Sometimes my fridge is loaded with fresh ingredients and sometimes it's not. On those busy weeknights when my fridge is mostly empty, I need recipes that utilize pantry and freezer staples that I can whip up on a whim.

I'm talking about tuna casserole with potato chips, peanut butter and jelly overnight oats and chickpea coconut curry - just to name a few - are easy, fast and nourishing dishes made with canned, packaged and frozen goods (that are still super nutritious).
