Dark Chocolate Granola with Coconut

This dark chocolate granola is incredibly simple to make and has flavor for miles!

It’s loaded with nutritious ingredients like oats, coconut, chia seeds, and flax along with delicious dark chocolate.

You'll have a big batch to eat all week long, making it the perfect recipe for meal prep!

How to make dark chocolate granola

  • Old-Fashioned Rolled Oats: Oats don’t just bring great texture to this coconut dark chocolate granola, they also bring a ton of health benefits!
    • Plus, they’re affordable, making them one of my favorite pantry staples.
  • Chia Seeds: These itty bitty little seeds are great for bringing the crunch to this granola, and they also bring all the fiber and omega 3 health benefits!
  • Coconut: The sunny flavor of coconut is a little tip off that it’s brings you the health benefits of the tropics.
    • Coconut is a good source of manganese, phosphorus, iron, calcium, copper, magnesium, and zinc.
  • Dark chocolate: Perhaps the star of the show here, dark chocolate is just irrestible and is a nutritious option, too!

Step-by-Step Instructions

  1. Preheat the oven to 250 degrees.
  2. Mix all the ingredients in a large mixing bowl, except the dark chocolate chips, until well combined.
  3. Transfer to a greased baking sheet and bake 45 minutes.
  4. Remove from the oven and allow to cool. Stir in the dark chocolate chips.

Storage Instructions

  • At room temperature: Store in an airtight container up to 2 weeks in a dry, dark place.
  • In the freezer: Store in an airtight container up to 2 months in the freezer.
    • Let thaw at room temperature then use within 1 week.

Nutrition Considerations

  • To make it gluten free: Use certified gluten free oats.
    • Be sure all other ingredients are gluten free.
  • To make it dairy free: This recipe does not contain dairy.
  • To make it vegan: Use maple syrup instead of honey.
  • To make it nut free: Skip the walnuts. Be sure all other ingredients are nut free.
  • To make it egg free: This recipe does not contain eggs.

Ingredients

  • 2 ½ cups rolled old-fashioned oats
  • 1 cup unsweetened coconut flakes
  • ½ cup chia seeds
  • ½ cup chopped walnuts or almonds
  • 2 tablespoons cocoa powder
  • ¼-½ teaspoon coarse salt
  • ¼ teaspoon ground cinnamon
  • ½ cup coconut oil
  • 4 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips

Notes

Cooking Tip: For bigger clusters, add an extra tablespoon or two of honey. Stir in the chocolate chips when the granola is still warm (not hot).
