It’s a concoction of fluffy, crisp pizza crust with leftover gravy, turkey, stuffing, Gruyere cheese and cranberry sauce drizzle.

How to make Thanksgiving leftovers pizza

  • Pizza Dough: I use whole wheat to get some extra fiber in my diet, but your favorite white dough also works!
  • Gravy: This acts as the sauce for your pizza – and it is DYNAMITE! If you don’t have any leftover from Thanksgiving, whip up a quick, small batch with butter, flour, stock, salt and black pepper.
  • Turkey: If you’re making this and you’re short on leftover turkey, feel free to pick up a rotisserie turkey breast!
    • Or, if you’re not a turkey person (believe it or not there are some people who don’t love it!), feel free to substitute in rotisserie chicken.
  • Stuffing:  Any type of turkey stuffing will be delicious on this pizza! Whether it’s white bread, sourdough, or even cornbread dressing – the results will be amazing.
  • Cranberry Sauce: You can make your own with fresh berries and it will be scrumptious on this pizza!
    • The added body with the whole and lightly smashed cranberries will elevate this pizza to new heights! Or, you can buy the stuff from a can, we don’t judge.
  • Gruyere: We love the rich and salty flavor of gruyere! That said, age plays a part in its flavor profile.
    • A younger gruyere is a little creamier, whereas a more aged version is a little more complex. Choose whichever version you like most!
    • If you don’t have gruyere on hand, Swiss cheese will step in as a great substitute. Also, in a pinch aged cheddar will be delicious with the Thanksgiving leftovers pizza ingredients.
  • Fresh Thyme and Sage: If at all possible, you really want the fresh stuff here. The flavors of the thyme and sage mimic the herbs in the cooked stuffing.
    • However, you can substitute in dried crumbled sage leaves and thyme leaves. Just decrease the amount because dried herbs are more potent than fresh herbs.
    • The basic rule of thumb is for every tablespoon of fresh herbs, substitute 1 teaspoon of dried.

Step-by-Step Instructions

  1. Preheat oven to 400°F.
  2. Spread pizza dough out in to a circle with a rolling pin, until it fits nicely on a pizza stone, using a sprinkle of flour if that helps roll it out without sticking to the rolling pin.
  3. Brush the crust with the olive oil.
  4. Evenly spread gravy on the pizza dough, leaving about ½ inch of crust uncovered around the outside.
  5. Top gravy with shredded cheese, turkey breast and clumps of stuffing.
  6. Bake for 12-15 minutes, until cheese is melted and bubbly and crust is browned and crispy.
  7. Place the cranberry sauce and water in a bowl and whisk until the cranberry sauce is thinned out enough to drizzle.
  8. Drizzle on pizza and garnish with fresh sage and thyme.
  9. Slice and serve immediately.

Recipe Substitutions and Alterations

  • Add veggies: If you have some leftover Brussels sprouts, feel free to shred them and add them to the pizza.
    • The same goes with cooked diced green beans, or a smattering of cooked peas a minute or so before the cooking time is done just to warm them through.
  • Add mashed potatoes: And some dollops of buttery mashed potatoes would be perfect on this pizza too!

Cooking Tip: If you like extra crispy crust, bake 3-5 additional minutes.
