Let's talk about baked blueberry donuts
Or is it doughnut time? Either way, I freakin' love donuts. They're a treat I rarely ever allow myself to have, just because I know they're deep fried and usually filled with something not-so-real (but for some reason, super delicious).
If I do splurge on a donut, I choose an apple fritter anyway, because holy crap apple fritters are so good.
But sometimes, I want to make my own donuts (exhibit avocado dark chocolate donuts, carrot cake donuts and cinnamon sugar pumpkin donuts) that are packed with flavor, but also have offer a boost of nutrition.
Yes, that is typically my M.O., but sometimes I try and hide it from you so you will make and eat the donuts without assuming they're too healthy to be delicious (nutritious CAN and DOES = delicious around here).
These Blueberry Flax Donuts with Orange Cardamom Glaze are no exception to the healthy (and delicious) donut rule.
A healthier way to make donuts
First of all, I use oat flour and ground flax as the base, which are seriously some of the most nutritious baking ingredients out there. Oats have a ton of fiber and flax is packed with omega 3's and fiber (hell0, heart healthy!).
I use both of these ingredients in almost all of my baking. And if you can't find oat flour, just toss some oats in a food processor and give 'em a zip until they have the consistency of flour. BOOM!
Second of all, I use much less oil/butter and sugar than most baked good recipes call for, because honestly, some desserts are just too sweet. Yes, I said too sweet.
I really just want the blueberries, orange and spices to shine, so why add a bunch of sugar to overpower it? Killing two birds with one stone here.
And of course, the blueberries are uber good-for-us, and there are loads of them in this recipe. Maybe too many? Nah.
Now that I've explained the nutritional benefits of these donuts, let's just go ahead and forget about that and just bake and eat them.
Because they're seriously moist, tender and the glaze is DYNAMITE (those cardamom floral notes, though).
You'll never seek out a long John or apple fritter again.

Blueberry Donuts with Orange Cardamom Glaze

- 1 ½ cups oat or whole wheat pastry flour*
- ½ cup ground flax seed
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon coarse salt
- ¼ cup dark brown sugar
- ¼ cup melted butter or oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ¼ cups milk (any kind)
- 1 cup fresh or frozen blueberries
- 1 cup powdered sugar
- 1-2 tablespoons fresh orange zest and juice
- 1-2 teaspoons ground cardamom
- Preheat oven to 400 degrees. Coat a donut pan with cooking spray. Set aside.
- In a medium mixing bowl, whisk together flour, flax, baking powder, cinnamon and salt.
- In another mixing bowl, use a hand mixer to beat together brown sugar, butter or oil and egg, until fluffy. Beat in vanilla extract, then milk. Add dry ingredients mixture to the bowl with the wet ingredients while beating on low, just until combined. Fold in blueberries.
- Spoon or pipe batter into the donut pan, keeping the hole open in the center. Bake 13-17 minutes, until toothpick inserted into the center comes out clean. Let slightly cool.
- In a small bowl, whisk together powdered sugar, orange zest and juice and cardamom. Pour glaze over each donut.
Substitution Tip: Use whole wheat, all-purpose or gluten free flour, if desired.
