How to make chicken sausage and potato skillet
Featured Ingredients
- Potatoes: I use a 1 ½ pound bag of baby potatoes (such as Little Potato Co. or Tasteful Selections) and steam them in the microwave per package directions. This cooks the potatoes quickly, then you can saute them with the other ingredients to get a quick crispy sear on them.
- Chicken sausage: Whatever flavor you enjoy (an Italian variety is perfect for this recipe), thinly sliced or chopped.
- Bell peppers: Two bell peppers, any color, seeded and thinly sliced.
- Garlic: A few minced cloves for ultimate fresh garlic flavor.
- Seasonings: Dried Italian seasoning, salt and pepper are perfect here.
Step-by-Step Instructions
- Steam potatoes per package directions. Let slightly cool, then slice in half.
- Heat 1 tablespoon olive oil in a large skillet to medium heat.
- Add chicken sausage and bell peppers.
- Sauté 5-6 minutes or until sausage is lightly browned and peppers are soft.
- Stir in half of the garlic, Italian season, salt and pepper.
- Transfer to a plate. Set aside.
- Add the remaining 1 tablespoon olive oil to the pan.
- Sauté potatoes 4-5 minutes or until lightly browned on each side.
- Stir in remaining garlic, Italian seasoning, salt and pepper.
- Stir in cooked sausage and peppers to combine.
Recipe Substitutions and Alterations
- For the potatoes: Any potato will work, just chop them up and steam them so they're bite-sized and cook through before adding to the skillet.
- I use baby reds, Yukon golds or white potatoes so I don't have to peel them (that's extra fiber and less work!).
- For the sausage: I enjoy Italian-seasoned chicken sausage because it's packed with flavor and lower in fat, but you can use whatever sausage you like.
- For the bell peppers: Use any color you like, or substitute for other vegetables, like zucchini, summer squash, mushrooms, onions or broccoli.
- For the seasonings: Add any dried or fresh herbs and spices you like. Fresh parsley and basil would be a nice touch, as would dried thyme and rosemary.
- Make it breakfast: Add scrambled, over-easy or poached eggs to make it breakfast.
