This chorizo fried rice is made with bell peppers, chorizo, fluffy rice, scrambled eggs and loads of spices.
It's easy to make and absolutely delicious!
How to make chorizo fried rice
Featured Ingredients
- Eggs: Any fabulous fried rice MUST have scrambled eggs!
- Onion and garlic: No explanation needed (but, FLAVOR).
- Bell peppers: I use a green and red, but any bell pepper will work.
- Chorizo: Grab a package of your favorite chorizo.
- Spices: I use chili powder, smoked paprika, cumin, crushed red pepper flakes
- Rice: A couple of cups of cooked brown or white rice.
- Cilantro: Gives herbiness to the fried rice (but you can skip it if you don't like it).
- Toppings: Avocado, Mexican cheese, crushed tortilla chips, green onion.
Step-by-Step Instructions
- Heat a large non-stick skillet to medium-low heat. Coat with cooking spray. Add the beaten eggs and use a spatula to constantly fold the eggs as they cook, until just set.
- Stir in ¼ teaspoon salt and ¼ teaspoon black pepper. Transfer the eggs to a plate and set aside.
- Heat the oil in the same skillet to medium heat.
- Add the onion and bell peppers and cook 3-4 minutes or until slightly soft.
- Add the chorizo and cook 6-7 minutes or until browned, breaking up the sausage into small pieces with a wooden spoon.
- Stir in the garlic, chili powder, cumin and smoked paprika.
- Fold in the cooked rice, scrambled eggs and remaining salt and black pepper. Fold in chopped cilantro.
- Top with cheese, avocado and/or tortilla chips, as desired.
Recipe Substitutions and Alterations
- Instead of chorizo: Try with ground beef, pork or turkey with extra spices.
- For the rice: Use brown or white rice. You can cook it on the stove or use frozen bags of rice or pouches of microwavable rice.
- For the bell peppers and onion: Grab a bag of the frozen chopped instead of cutting them yourself.
- If you don't like cilantro: Skip it and use parsley!

Notes
Substitution Tip: Substitute with ground chicken, turkey, beef or pork, if desired. You may have to increase the volume of the chili powder, cumin and smoked paprika to make it equally delicious.
