Chicken Sausage and Potato Skillet

An easy, 25-minute weeknight meal with chicken sausage, potatoes, bell pepper, garlic and Italian seasoning.

Ingredients

  • 1 1/2 pounds baby potatoes
  • 2 tablespoons olive oil, divided
  • 12 ounces chicken sausage, sliced
  • 2 bell peppers, seeded and sliced
  • 4 cloves garlic, peeled and minced, divided
  • 1 1/2 tablespoons Italian seasoning, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided

Instructions

  1. Steam potatoes per package directions. Let slightly cool, then slice in half.
  2. Heat 1 tablespoon olive oil in a large skillet to medium heat. Add chicken sausage and bell peppers. Sauté 5-6 minutes or until sausage is lightly browned and peppers are soft. Stir in half of the garlic, Italian season, salt and pepper. Transfer to a plate. Set aside.
  3. Add the remaining 1 tablespoon olive oil to the pan. Sauté potatoes 4-5 minutes or until lightly browned on each side. Stir in remaining garlic, Italian seasoning, salt and pepper. Stir in cooked sausage and peppers to combine.
