How to make sausage gravy breakfast pizza

Pizza Crust:
- Greek yogurt: It may sound odd, but plain Greek yogurt makes the perfect pizza dough.
- Self-rising flour: It's flour that has the leavening agent (baking powder or soda) already added to it.
- Olive oil: Once the dough is rolled out, a drizzle and brush of olive oil on the crust helps it become lightly browned when baked.
Gravy:
- Butter and flour: To make a roux to thicken the gravy.
- Sausage: Ground breakfast sausage - either turkey or pork - is perfect.
- Garlic: For flavor, obviously!
- Milk: It works with skim, low-fat or whole.
Toppings:
- Scrambled eggs: A few perfectly fluffy scrambled eggs make the perfect breakfast pizza topping.
- Spinach: A few handfuls of fresh baby spinach bring life to this pizza.
- Cheeses: I like a combo of sharp cheddar and mozzarella.
Step-by-Step Instructions
- Preheat the oven to 400 degrees. Place the pizza stone in the oven.
- Place the Greek yogurt, self-rising flour and pinch of salt in the bowl of a stand mixer fitted with a dough hook.
- Run the mixer on low for 5-6 minutes, scraping the sides as necessary with a spatula, until a smooth ball of dough has formed.
- Transfer the dough to a cutting board dusted with flour.
- Work dough with your hands and press out and pull into a thin circle.
- Remove the pizza stone from the oven and transfer dough to the pizza stone and drizzle with olive oil. Set aside.
- In a medium non-stick saucepan, heat butter on medium-high until melted.
- Add the sausage and cook until browned, breaking it up with a wooden spoon as it cooks.
- Whisk in the garlic, then whisk in the flour and allow to cook, whisking regularly, for 60-90 seconds.
- Slowly whisk in the milk until smooth. Allow to cook 3-4 minutes, continuing to whisk, until thickened.
- Season with salt and pepper to taste. Spread the sauce on pizza dough.
- Top the pizza with scrambled eggs, greens and cheeses.
- Cook pizza for 10-15 minutes, until crust and cheese are lightly browned.
- Let cool, then slice and serve.
Recipe Substitutions and Alterations
- For the Greek yogurt: You can use non fat, low-fat or whole milk versions.
- For the self-rising flour: If you don't have or can't find self-rising flour, you can substitute with all-purpose or whole wheat flour and add 1 teaspoon of baking soda.
- For the sausage: Use either pork or turkey sausage, or substitute with Italian sausage.
- For the milk: You can use skim, low-fat or whole milk, or substitute with chicken stock instead.
- For the spinach: Try with chopped kale.
- For the cheeses: Use any combination of your favorite shredded cheeses.

Have you tried this dough for biscuits.... I am ready to try it right now for tonight. Just looking for healthier alternatives to bread. Btw I did try the breakfast pizza and our children loved it. Even without the sauce... it was from another website, same crust. Definitely trying with the sauce next time!

OMG rave reviews from my husband and I. This was beyond delicious!! The 'sauce' is delightful!! I really don't care for marinara sauce anymore so this was a hit for me. I tried to make an edge around the outside of the dough but it baked out, thus some of the eggs ran out. I just cut them away after baking. I just used enough eggs to cover the top and I omitted the last unscrambled eggs. Thank you for the recipe. This is definitely a keeper!! <3
