3 pounds sweet potatoes (about 5-6 medium), peeled and cut into 1-inch cubes
¼ cup butter, cut into pats
½ cup milk
¼ cup pure maple syrup
2 teaspoons ground cinnamon
1 ½ teaspoons coarse salt
Instructions
Bring a large pot of water to a boil. Add the cubed sweet potatoes and cook 8-12 minutes or until fork tender. Drain.
Add the butter to the sweet potatoes and let them melt. Add the milk, maple syrup, cinnamon and salt. Use a hand mixer set on medium speed to beat the potatoes until smooth. Taste and adjust seasoning, if necessary.
Serve with additional melted butter and maple syrup on top, if desired.
Notes
Cooking Tip: If you cut the potatoes in smaller cubes, they'll boil quicker.
