Ground Chicken Sloppy Joes

Ground chicken sloppy joes made with a quick sauce of ketchup, brown sugar and mustard and seasoned with onion and garlic. A family favorite!

Ingredients

  • 1 tablespoon olive oil
  • 1-pound ground chicken (or ground turkey or beef)
  • 1 teaspoon coarse salt
  • 1/2 teaspoon each onion powder and garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/2 cup ketchup
  • 1/3 cup brown sugar
  • 2 tablespoons yellow mustard
  • 4 whole grain hamburger buns
  • Pickles, for topping

Instructions

  1. In a medium skillet, heat the oil to medium heat. Add the ground chicken and cook 6-8 minutes or until browned and cooked through, breaking it up with a wooden spoon as it cooks.
  2. Stir in the salt, onion and garlic powders and black pepper.
  3. Stir in the ketchup, brown sugar, mustard and 3 tablespoons of water. Bring to a high simmer, then reduce the heat to a low simmer and let cook 3-4 minutes, stirring frequently, until the sauce has thickened and coats the chicken. Taste and adjust the seasoning, if necessary.
  4. Scoop the sloppy joe meat onto the bottom buns and top with pickles and the top bun.
  5. Serve immediately.

Notes

Substitution Tip: Swap the ground chicken for ground turkey or beef.
