Antipasto Ham Roll-Ups

Low carb ham roll-ups with cream cheese, provolone, sun-dried tomatoes, olives, artichokes and fresh herbs.

Ingredients

  • ½ pound deli ham slices
  • 10 slices mozzarella or provolone cheese
  • 2 ounces cream cheese, softened
  • Freshly ground black pepper and crushed red pepper flakes
  • ½ cup chopped sun-dried tomatoes
  • ½ cup sliced black olives
  • ½ cup marinated artichoke hearts, chopped
  • Small handful fresh oregano leaves

Instructions

  1. Lay 10 slices of deli ham on a cutting board. Top each with a slice of mozzarella or provolone cheese, then smear with a thin layer of cream cheese, all the way out to the edges. Sprinkle with a pinch of black pepper and red pepper flakes. Top each with a few sun-dried tomatoes, black olives and artichoke hearts, then sprinkle with fresh oregano leaves.
  2. Gently roll, tucking the filling in as you go. If roll-up doesn’t stay secured, add a dab of cream cheese under the edge to help hold it together. Repeat with remaining roll-ups.

Notes

Storage Tip: Store ham roll-ups in an airtight container for up to 3 days.
