An easy Italian-inspired one pan meal with smoked sausage, potatoes and bell peppers.


  • 12 ounces smoked sausage, sliced into rounds
  • 1 ½ pounds baby red or Yukon potatoes, cubed
  • 2 bell peppers, cored, seeded and sliced
  • 2 tablespoons olive oil
  • 1 ½ tablespoons Italian seasoning
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes


  1. Preheat the oven to 400 degrees.
  2. Coat a large baking sheet with cooking spray. Arrange the sausage, potatoes and bell peppers on the baking sheet and drizzle with olive oil. Sprinkle with Italian seasoning, salt, black pepper and red pepper flakes. Toss to coat.
  3. Roast 25-35 minutes, stirring halfway, or until potatoes are fork tender and sausage, potatoes and bell peppers and lightly browned. Serve.


Substitution Tip: Use turkey or chicken smoked sausage for a lighter meal.
