  • ½ cup oil or applesauce
  • ½ cup brown sugar
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 1 cup milk (of choice)
  • 1 ½ teaspoons pure vanilla extract
  • 1 ½ cups wheat or oat bran
  • 1 cup flour*
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • ½ teaspoon coarse salt

  1. Preheat the oven to 350 degrees. Line a 12-cup muffin tin with muffin liners. Set aside.
  2. Add the oil, brown sugar and honey to a medium mixing bowl. Whisk the ingredients together until light and fluffy. Add the eggs and whisk until the mixture is fluffy and pale in color. Whisk in the yogurt, milk and vanilla extract until well mixed.
  3. In a separate medium bowl, whisk together the wheat bran, flour, baking powder, soda, cinnamon and salt.
  4. Use a spatula to mix the dry ingredients into the wet ingredients until just combined.
  5. Use a cookie scoop to fill the muffin liners almost to the top. Bake 17-22 minutes or until just set. Let slightly cool, then remove from the muffin tin.
