Cucumber Feta Pasta Salad

A bright, fresh and tangy pasta salad with crisp cucumbers, feta cheese, dill, green onion and a zippy red wine vinegar, lemon and olive oil dressing.

Ingredients

Salad:

  • 8-ounce box Andrean Dream Macaroni Pasta
  • 4 mini cucumbers, diced
  • 1 cup crumbled feta cheese
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh dill, chopped

Dressing:

  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • Zest and juice of 1 medium lemon
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Drain. Rinse with cold water. Place in a large bowl.
  2. To the bowl, add cucumbers, feta cheese, green onion and dill.
  3. In a glass measuring cup or small bowl, whisk together dressing ingredients. Taste and adjust seasoning, if necessary.
  4. Pour dressing into the bowl with the salad ingredients; toss to coat. Cover; refrigerate at least 2 hours. Taste and adjust seasoning, if necessary.

Notes

Substitution Tip: Use any shaped pasta you have on hand.
