Meatloaf:
1 1/2pounds lean Ground Beef
1/2cup Panko breadcrumbs
1 large egg, beaten
1/4cup flat-leaf Italian parsley, chopped
3-4 cloves garlic, peeled and minced
2 tablespoons ketchup
1 tablespoon balsamic vinegar
1 tablespoon dried minced onion
2 teaspoons Italian seasoning
1 teaspoon coarse salt
1/2 teaspoon ground black pepper
Sauce:
3 tablespoons ketchup
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
Instructions
Preheat the oven to 350 degrees. Coat a 12-cup muffin tin with cooking spray. Set aside.
In a large bowl, stir together the ground beef, Panko, egg, onion, parsley, garlic, ketchup, balsamic vinegar, minced onion, Italian seasoning, salt and black pepper until thoroughly combined.
Transfer the mixture to the loaf pan and spread into an even layer.
In a small bowl, whisk together the ketchup, balsamic vinegar and brown sugar.
Fill each muffin tin well with the meatloaf mixture. Spread the balsamic BBQ sauce on top of each meatloaf cup.
Bake 15-17 minutes or until the internal temperature reaches 160 degrees F and each meatloaf cup starts to pull away from the edges of the pan. Let slightly cool, then slice and serve.
