Broccoli Cheddar Bites

Broccoli bites made with riced broccoli, bacon, cheddar cheese and seasonings.

Ingredients

  • 4 cups cooked broccoli florets
  • 3 slices cooked bacon
  • 3 large eggs
  • ¾ cup shredded sharp or mild cheddar cheese
  • ¼ cup panko breadcrumbs
  • 1 teaspoon coarse salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • Pinch crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 400 degrees. Coat a baking sheet with cooking spray and set aside.
  2. Place all ingredients in the bowl of a food processor and pulse, scraping the sides of the bowl as needed, until the mixture comes together in a paste-like texture.
  3. Using a medium cookie scoop, form balls of mixture, using hands to shape. Place each bite on the prepared baking sheet, about ½ inch apart. Coat bites with cooking spray.
  4. Bake 15-20 minutes, until breadcrumbs are crispy and lightly browned. Allow to cool slightly before eating.

Notes

Cooking Tip: If you don't have a food processor, use a chef's knife to chop the broccoli and bacon until crumbled.

Serving Tip: Serve with mayonnaise mixed with Sriracha (to taste).
