Alphabet Vegetable Soup

A quick and simple soup with alphabet pasta, frozen veggies, canned fire-roasted tomatoes, Italian herbs and spices and a flavorful broth.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion, peeled and diced
  • 12-ounce bag frozen soup vegetables or mixed vegetables
  • 3-4 cloves garlic, peeled and minced
  • 1 tablespoon Italian seasoning
  • 2 teaspoons dried oregano and/or dried basil
  • 1 1/2 teaspoons coarse salt
  • 1/2 teaspoon ground black pepper
  • 7-ounce bag alphabet pasta
  • 8 cups unsalted chicken or vegetable stock
  • 15-ounce can petite diced tomatoes
  • 2 teaspoons unsalted or low sodium chicken or vegetable bouillon (optional)
  • 15-ounce can chickpeas or white beans (optional)
  • 1 tablespoon dried parsley (optional)

Instructions

  1. Heat the olive oil in a Dutch oven or soup pot to medium heat. Add the onion and sauté 3-4 minutes or until the onion is starting to soften.
  2. Stir in the vegetables and cook another 5-6 minutes or until the vegetables are soft.
  3. Stir in the garlic, Italian seasoning, oregano and/or basil, salt and black pepper and sauté 30-60 seconds or until fragrant.
  4. Stir in the pasta, stock, tomatoes, bouillon (if using) and chickpeas or beans (if using). Bring to a simmer for 15-20 minutes or until the pasta is al dente, stirring occasionally.
  5. Stir in the dried parsley (if using). Taste and adjust the seasoning, if necessary.
  6. Serve in bowls.

Notes

Substitution Tip: Use any small shaped pasta (like stars or ditalini) rather than alphabet.
