Air fryer turkey zucchini meatballs in a bowl with rigatoni and marinara.

These turkey zucchini meatballs are light, juicy, and packed with naturally anti-inflammatory ingredients that make weeknight dinners feel extra nourishing.

Ingredients

Units Scale
  • 1/2 medium zucchini, shredded (about 1/2 cup)
  • 1 pound ground turkey
  • 1 large egg
  • 1/3 cup quick oats
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Place shredded zucchini in a kitchen towel. Squeeze to release excess water. Transfer to a large glass bowl.
  2. To the bowl, add ground turkey, egg, quick oats, basil, garlic powder, onion powder, salt and pepper; stir to thoroughly combine. Form mixture into 2-inch balls.
  3. Preheat the air fryer to 375 degrees. Coat the air fryer basket with olive oil spray or line with parchment paper or an air fryer liner.
  4. Transfer the meatballs to the air fryer basket. Cook 8-10 minutes or until chicken is fully cooked and golden brown on the edges.

Notes

Tip: Zucchini adds moisture to the meatballs, making them juicy, but you don’t want them to be too wet, or the meatballs won’t air fry or bake well. Be sure to squeeze out the water before adding it to the meatball mixture.
